| Fast and Healthy: Chicken Fried Rice |

Eating out at restaurants and fast food chains can be very tempting; after all, it is easy and convenient, but it can also create a massive dent in your wallet. Here is a delicious, quick, and inexpensive recipe:
NUMBER OF INGREDIENTS: 6
Cut the chicken into cubes. Pour 1 tablespoon of olive oil into a wok or 2-quart pan. Add the chicken and sauté for 3 minutes. Take the chicken out and set it outside. Next, place 1 tablespoon of oil in the pan and cook the rice until golden brown. Finally, put the chicken breasts, soy sauce, peas and carrots, and rice in a pot with 4 cups of water. Bring to a boil and reduce heat, cover, and simmer for 20 minutes or until rice is tender. Once the meal is cooked, push all of food to one side of the pan (or you can use a separate pan) pour one teaspoon of olive or butter and scramble the two eggs. Once the eggs are scrambled, add to the rest of the mixture. Serve. |
